GRILLED ASPARAGUS WITH SALT-CURED HAM

Grilled asparagus has a wonderfully intense flavor that stands up well to the wrapping of crisp, salty ham. Serve this traditional tapas dish with drinks before a meal.

INGREDIENTS
6 slices of Serrano ham
12 asparagus spears
1 tablespoon olive oil
sea salt and coarsely ground black pepper

SERVES 4

1. Halve each slice of ham lengthwise and wrap one half around each of the asparagus spears.

2. Brush the ham and asparagus lightly with olive oil and sprinkle with salt and pepper. Cook on a medium grill for about 4 minutes, turning frequently, until the asparagus is tender but still firm. Serve at once.
