GRILLED MUSSELS WITH PARSLEY Mussels release an irresistible aroma as they cook on the grill. Don’t be surprised if they are devoured the moment they are ready.
INGREDIENTS 1. Scrub the mussels, scraping off any barnacles and pulling out the beards. Tap any closed mussels sharply with a knife and discard any that fail to open. 2. Place the mussels with the water in a large saucepan. Cover and steam for 5 minutes, or until all of the mussels have opened. 3. Drain the mussels, discarding any that remain closed. Snap the top shell off of each, leaving the mussel still attached to the bottom shell. 4. In a large bowl, mix together the melted butter, olive oil, grated Parmesan cheese, chopped parsley, garlic and ground black pepper. 5. Using a spoon, place a small amount of the cheese mixture on top of each mussel. 6. Cook the mussels in a saucepan on a medium grill for 2—3 minutes, or until the mussels are sizzling hot. Serve immediately, with crusty French bread.
