ROASTED GARLIC TOASTS

Roasting garlic in its skin on a grill produces a soft, aromatic purée with a sweet, nutty flavor. Spread on crisp toast to make a delicious appetizer or accompaniment to meat or vegetable dishes.

INGREDIENTS
2 whole garlic heads extra virgin olive oil fresh rosemary sprigs
loaf of ciabatta or thick baguette
chopped fresh rosemary
salt and freshly ground black pepper

SERVES 4

1. Slice the tops from the heads of garlic using a sharp kitchen knife.

2. Brush the garlic heads with extra virgin olive oil and add a few sprigs of fresh rosemary before wrapping in foil. Cook the foil parcels on a medium- hot grill for 25—30 minutes, turning occasionally, until the garlic is soft.

3. Slice the bread and brush each slice generously with olive oil. Toast the slices on the grill until crisp and golden, turning once.

4. Squeeze the garlic cloves from their skins onto the toasts. Sprinkle with the chopped fresh rosemary and olive oil, and add salt and black pepper to taste.
