Barbecue (BBQ) Dessert Recipes
At the end of a barbecue it’s a lovely idea to use the lingering fire to make a delicious fruity dessert. You can cook fruit to melting tenderness by wrapping it in foil, including sugar, spices and a sprinkling of liqueur in the parcel. To broil fruit, cut it into chunks and spear it on skewers, or just lay large slices on the grill rack. Sprinkle it with sugar to caramelize in the heat. The aroma is intoxicating: even those who thought they couldn’t eat another bite will be beguiled by it. Accompany grilled fruit with a buttery, spicy sauce, crisp toasted brioche or freshly made griddle cakes — and perhaps a scoop of whipped cream or ice cream — to make a perfect end to the meal.
