LAMB WITH MINT AND LEMON

Use this simple and traditional marinade to make the most of fine-quality lamb leg steaks. Lemon and fresh mint combine extremely well with the flavor of grilled lamb.

INGREDIENTS
4 lamb steaks, about 8 ounces each
fresh mint leaves, to garnish

FOR THE MARINADE
grated rind and juice of 1/2 lemon
1 garlic clove, crushed
1 scallion, finely chopped
1 teaspoon finely chopped fresh mint
2 tablespoons extra virgin olive oil
salt and freshly ground black pepper

SERVES 4

1. Mix all the marinade ingredients and season to taste. Place the lamb steaks in a shallow dish and add the marinade. Cover with plastic wrap and allow to marinate in the refrigerator for several hours or overnight.

2. Drain the lamb from the marinade and cook on a medium-hot grill for 10—15 minutes or until just cooked, basting occasionally with the marinade and turning once. Garnish the lamb steaks with the fresh mint leaves.
