APPLE COLESLAW

There are many variations of this traditional salad; this recipe combines the sweet flavors of apple and carrot with a hint of celery. Prepare the salad in advance and chill until needed.

INGREDIENTS
1 pound white cabbage
1 medium onion
2 apples, peeled and cored
6 ounces carrots, peeled
2/3 cup mayonnaise
1 teaspoon celery salt freshly ground black pepper

SERVES 4

1. Remove the outer leaves from the cabbage and, using a heavy knife, cut it into 2-inch wedges. Remove and discard the stem sections.

2. Feed the cabbage wedges and the onion through the slicing blade of a food processor. Change to a grating blade and grate the apples and carrots. If you do not have a food processor, use a vegetable slicer and a hand grater.

3. Combine the salad ingredients in a large mixing bowl. Fold in the mayonnaise and season with celery salt and freshly ground black pepper. Garnish with apple slices and parsley.
