PEPPERS WITH TOMATOES AND ANCOVES This is a Sicilian-style salad full of warm Mediterranean flavors. The salad improves if it is made and dressed an hour or two before serving.
INGREDIENTS 1. Cut the peppers in half and remove the seeds and stalks. Cut into quarters and cook, skin side down, over a hot grill or under the broiler until the skin chars. Transfer to a bowl and let cool. Peel the peppers and cut into strips. 2. Arrange the peppers and fresh tomatoes on a serving dish. Sprinkle the anchovies, sun-dried tomatoes, capers, pine nuts and garlic on top. 3. To make the dressing, mix together the olive oil, vinegar, lemon juice and chopped fresh herbs and season with plenty of salt and pepper. Pour the dressing over the salad before serving.
