TOMATO AND FETA CHEESE SALAD

Sweet sun-ripened tomatoes are rarely more delicious than when mixed with Feta cheese and olive oil. This salad can be served with any grilled meats, fish or vegetables.

INGREDIENTS
2 pounds tomatoes
7 ounces feta cheese
1/2 cup olive oil
12 black olives
4 sprigs fresh basil
freshly ground black pepper

SERVES 4

1. Remove the tough cores from the tomatoes with a small kitchen knife.

2. Slice the tomatoes thickly on a chopping board and arrange the slices in a wide, shallow dish.

3. Crumble the feta cheese over the tomatoes, sprinkle with olive oil, then sprinkle with olives and fresh basil. Season with freshly ground black pepper and serve at room temperature.
