GINGER AND LIME MARINADE

This fragrant marinade will guarantee a mouthwatering aroma from the grill. Shown here on shrimp and monkfish kebabs, it is just as delicious with chicken or pork.

INGREDIENTS
3 limes
1 tablespoon green cardamom pods
1 onion, finely chopped
1-inch piece fresh ginger, grated
1 large garlic clove, crushed
3 tablespoons olive oil

SERVES 4—6

1. Finely grate the rind from one lime and squeeze the juice from all of them.

2. Split the cardamom pods and remove the seeds. Crush with a mortar and pestle or the back of a heavy-bladed knife.

3. Mix all the marinade ingredients together and pour over the meat or fish. Stir gently, cover and set aside in a cool place to marinate for 2—3 hours.

4. Drain the meat or fish when you are ready to cook it on the grill. Baste the meat occasionally with the marinade while cooking.
