ORANGE AND GREEN PEPPERCORN MARINADE

This is an excellent light marinade for delicately flavored whole fish such as sea trout, bass or bream. The beauty of the fish is perfectly set off by the softly colored marinade.

INGREDIENTS
1 red onion
2 small oranges
6 tablespoons light olive oil
2 tablespoons cider vinegar
2 tablespoons green peppercorns in brine, drained
2 tablespoons chopped fresh parsley
salt and sugar

FOR 1 MEDIUM-SIZE FISH

1. With a sharp knife, slash the fish 3 or 4 times on each side.

2. Cut a piece of foil big enough to wrap the fish and use to line a large dish. Peel and slice the onion and oranges. Lay half the slices on the foil, place the fish on top and cover with the remaining onion and orange.

3. Mix the remaining marinade ingredients and pour over the fish. Cover and let marinate for 4 hours, occasionally spooning the marinade over the fish.

4. Fold the foil loosely over the fish and seal the edges securely. Bake on a medium grill for 15 minutes for 1 pound, plus 15 minutes more.
