Barbecue (BBQ) Seafood Recipes

Cooking over charcoal adds a marvellous flavor to fish and seafood, and it’s very quick and easy to prepare this way. Oily fish such as mackerel, sardines or tuna are perfectly suited to broiling and won’t dry out, while charbroiling will enhance their robust flavors. Use plump shrimps or firm meaty-textured fish such as monkfish or swordfish for kebabs, but marinate them first to keep them moist. More delicate fish, or those that are best cooked in their own steam, can also be grilled very successfully: just wrap them securely in aluminum foil and cook them either on the rack or directly on the coals. You can include all kinds of flavorings in the foil parcels, too.
