HALIBUT WITH FRESH TOMATO AND BASIL SALSA

Take care when cooking this dish, as halibut has a tendency to break easily, especially when the skin has been removed. Season well to bring out the flavor of the fish and the taste of the sauce.

INGREDIENTS
4 halibut fillets, about 6 ounces each
3 tablespoons olive oil

FOR THE SALSA
1 medium tomato, roughly chopped
1/4 red onion, finely chopped
1 small jalapeno pepper
2 tablespoons balsamic vinegar
10 large fresh basil leaves
1 tablespoon olive oil
salt and freshly ground black pepper

SERVES 4

1. To make the salsa, mix together the chopped tomato, red onion, jalapeno pepper and balsamic vinegar in a bowl. Slice the fresh basil leaves finely, using a sharp kitchen knife.

2. Stir the basil and the olive oil into the tomato mixture. Season to taste. Cover the bowl with plastic wrap and let sit for at least 3 hours.

3. Rub the halibut fillets with oil and season them. Cook on a medium grill for 8 minutes, basting with oil and turning once. Serve with the salsa.
