TROUT WITH BACON The smoky, savory flavor of crisp grilled bacon perfectly complements the delicate flesh of the trout in this simple dish.
INGREDIENTS 1. Place the trout on a chopping board and pat dry with paper towels. Season the flour with the salt and freshly ground black pepper. Stretch the bacon slices out thinly using the back of a heavy kitchen knife. 2. Roll the fish in the seasoned flour mixture and wrap tightly in the bacon slices. Brush with olive oil and cook on a medium-hot grill for 10—15 minutes, turning once. Serve at once, with the lemon juice drizzled on top.
