Barbecue (BBQ) Vegetarian Recipes
Vegetables cooked on the grill acquire a richness and depth of flavor that will add an extra dimension to your meal. There are lots of ideas here for vegetable accompaniments to meat and fish dishes, as well as for substantial main dishes that everyone, vegetarian or not, will love. All vegetables can be cooked in aluminum foil parcels, but many are ideally suited to cooking on the grill: jacket potatoes, bell peppers, eggplant and corn on the cob are irresistible cooked over charcoal, or you can spear a mixture of vegetables onto skewers to make colorful and delicious kebabs. Charbroiled vegetables can also be cooled and made into fabulous salads. They certainly shouldn’t be an afterthought on your barbecue menu.
