CHICKEN WITH GREEN MANGO

Green, unripe mango is used for cooking various dishes on the Indian sub-continent, including pickles, chutneys and some meat, chicken and vegetable dishes. This is a fairly simple chicken dish to prepare and is served with rice and dal.

INGREDIENTS
1 green mango
3 1/4 cups cubed chicken
1/4 teaspoon black onion seeds
1 teaspoon grated fresh ginger
1/2 teaspoon crushed garlic
1 teaspoon ground chilies
1/4 teaspoon ground turmeric
1 teaspoon salt
1 teaspoon ground coriander
2 tablespoons corn oil
2 onions, sliced
4 curry leaves
1 1/4 cups water
2 tomatoes, quartered
2 green chilies, chopped
2 tablespoons chopped fresh cilantro

SERVES 4

1. To prepare the mango, peel, pit and slice the flesh thickly. Place the mango slices in a small bowl, cover and set aside.

2. Place the chicken cubes in a bowl and add the onion seeds, ginger, garlic, ground chilies, turmeric, salt and ground coriander. Mix the spices into the chicken and then add half the mango slices.

3. In a medium saucepan, heat the oil and fry the sliced onions until they turn golden brown. Add the curry leaves.

4. Gradually add the spiced chicken pieces and mango slices, stirring constantly.

5. Pour in the water, lower the heat and cook for about 12—15 minutes, stirring occasionally, until the chicken is cooked through and the water has been absorbed.

6. Add the remaining mango slices, the tomatoes, green chilies and cilantro and serve hot.
