BLACKENED CHICKEN BREASTS

Chicken breasts with a seasoned coating of herbs and spices.

INGREDIENTS
6 medium chicken breasts, boned and skinned
6 tablespoons butter or margarine
1 teaspoon garlic paste
4 tablespoons finely grated onion
1 teaspoon cayenne
2 teaspoons sweet paprika
1 1/2 teaspoons salt
1/2 teaspoon white pepper
1 teaspoon black pepper
1/4 teaspoon ground cumin
1 teaspoon dried thyme leaves

SERVES 6

1. Slice each chicken breast piece 1 in half horizontally. Flatten them down slightly with the heel of your hand.

2. Melt the butter or margarine in a small saucepan together with the garlic paste.

3. Combine all the remaining ingredients in a shallow bowl and stir well. Brush the chicken pieces on both sides with melted butter or margarine, then sprinkle evenly with the seasoned mixture.

4. Heat a large heavy frying pan over high heat until a drop of water sprinkled on the surface sizzles. This will take 5—8 minutes.

5. Drizzle 1 teaspoon of melted butter on each chicken piece. Place them in the pan in an even layer, 2 or 3 at a time. Cook until the underside begins to blacken, about 2—3 minutes. Turn over and cook 2—3 minutes more, or until the other side blackens. Serve hot.
