CHICKEN WITH HONEY AND GRAPEFRUIT Chicken breast portions cook very quickly and are ideal for suppers “on-the-run” — but don’t be tempted to overcook them. You could substitute boneless turkey breasts, or duck breast fillets for the chicken, if you like.
INGREDIENTS 1. Make three quite deep, diagonal slits in the chicken flesh, using a large sharp knife. 2. Brush the chicken all over with the honey and sprinkle well with seasoning. 3. Put the chicken in a flameproof dish, the uncut side facing up, and place under a medium broiler for 2—3 minutes. 4. Turn the chicken over and place the grapefruit segments in the slits. Brush with more honey and cook for another 5 minutes, or until tender. If necessary, reduce the heat so that the honey glaze does not burn. Serve at once with noodles and salad leaves.
