CHICKEN AND SHIITAKE MUSHROOM PIZZA The addition ofshiitake mushrooms adds an earthy flavor to this colorful pizza, while fresh red chili gives o hint of spiciness.
INGREDIENTS 1. Preheat the oven to 425°F. Heat 2 tablespoons of the olive oil in a wok or large frying pan. Add the chicken, scallions, chili, pepper and mushrooms and stir-fry over high heat for 2—3 niinutes, until the chicken is firm but still slightly pink in the center. Season with salt and pepper. 2. Pour off any excess oil, then set aside the chicken mixture until cool. 3. Stir the fresh cilantro into the Jchicken mixture. 4. Brush the pizza crust with the chili oil. 5. Spoon on the chicken mixture and drizzle on the remaining olive oil. 6. Grate the mozzarella and Usprinkle on. Bake for 15—20 minutes, until crisp and golden. Serve immediately.
