CHICKEN AND SHIITAKE MUSHROOM PIZZA

The addition ofshiitake mushrooms adds an earthy flavor to this colorful pizza, while fresh red chili gives o hint of spiciness.

INGREDIENTS
3 tablespoons olive oil
3 cups chicken breast fillets, skinned and cut into thin strips
1 bunch scallions, sliced
1 fresh red chili, seeded and chopped
1 red bell pepper, seeded and cut into thin strips
3 ounces fresh shiitake mushrooms, wiped and sliced
3—4 tablespoons chopped fresh cilantro
1 pizza crust, about 10—12 inches diameter
1 tablespoon chili oil
1 1/4 cups mozzarella cheese
salt and black pepper

SERVES 3-4

1. Preheat the oven to 425°F. Heat 2 tablespoons of the olive oil in a wok or large frying pan. Add the chicken, scallions, chili, pepper and mushrooms and stir-fry over high heat for 2—3 niinutes, until the chicken is firm but still slightly pink in the center. Season with salt and pepper.

2. Pour off any excess oil, then set aside the chicken mixture until cool.

3. Stir the fresh cilantro into the Jchicken mixture.

4. Brush the pizza crust with the chili oil.

5. Spoon on the chicken mixture and drizzle on the remaining olive oil.

6. Grate the mozzarella and Usprinkle on. Bake for 15—20 minutes, until crisp and golden. Serve immediately.
