CHINESE CHICKEN WITH CASHEW NUTS

A stir-fry of chicken with egg noodles, scallions and cashews.

INGREDIENTS
4 chicken breasts about 6 ounces each, boned, skinned and sliced into strips
3 garlic cloves, crushed
4 tablespoons soy sauce
2 tablespoons cornstarch
1 cup dried egg noodles
3 tablespoons peanut or sunflower oil
1 tablespoon sesame oil
1 cup roasted cashews
6 scallions, cut into 2-inch pieces and halved lengthwise
scallion curls and a little chopped red chili, to garnish

SERVES 4

1. Put the chicken, garlic, soy sauce and cornstarch in a bowl and mix well. Cover and chill for about 30 minutes.

2. Bring a pan of water to a boil and add the noodles. Turn off the heat and let stand for 5 minutes. Drain well and reserve.

3. Heat the oils in a large frying 3 pan and add the chicken and marinade. Stir-fry for about 3—4 minutes.

4. Add the cashews and scallions to the pan and stir-fry for 2—3 minutes.

5. Add the drained noodles and stir-fry for another 2 minutes. Serve immediately, garnished with the scallion curls and chopped red chili.
