CHINESE CHICKEN WITH CASHEW NUTS A stir-fry of chicken with egg noodles, scallions and cashews.
INGREDIENTS 1. Put the chicken, garlic, soy sauce and cornstarch in a bowl and mix well. Cover and chill for about 30 minutes. 2. Bring a pan of water to a boil and add the noodles. Turn off the heat and let stand for 5 minutes. Drain well and reserve. 3. Heat the oils in a large frying 3 pan and add the chicken and marinade. Stir-fry for about 3—4 minutes. 4. Add the cashews and scallions to the pan and stir-fry for 2—3 minutes. 5. Add the drained noodles and stir-fry for another 2 minutes. Serve immediately, garnished with the scallion curls and chopped red chili. |
