MINTY YOGURT CHICKEN

Chicken marinated with yogurt, mint, lemon and honey and broiled.

INGREDIENTS
8 chicken thigh portions, skinned
1 tablespoon honey
2 tablespoons lemon (or lime) juice
2 tablespoons plain yogurt
4 tablespoons chopped fresh mint
salt and black pepper
new potatoes and a tomato salad, to serve

SERVES 4

1. Slash the chicken flesh at regular intervals with a sharp knife. Place in a bowl.

2. Mix together the honey, lime or lemon juice, yogurt, seasoning and half the mint.

3. Spoon the marinade over the chicken and let marinate for 30 minutes. Line the broiler pan with foil and cook the chicken under a medium-hot broiler until thoroughly cooked and golden brown, turning the chicken occasionally during cooking.

4. Sprinkle with the remaining mint and serve with the potatoes and tomato salad.
