ORIENTAL CHICKEN SANDWICH

This filling is also good served in warmed pita bread, in which case cut the chicken into small cubes before marinating. Broil on skewers and serve warm.

INGREDIENTS
1 tablespoon soy sauce
1 teaspoon honey
1 teaspoon sesame oil
1 garlic clove, crushed
6 ounces chicken breast, boned and skinned
4 slices white bread
4 tablespoons peanut butter
2 tablespoons beansprouts
1 ounce red bell pepper, seeded and finely sliced
2 sprigs parsley, to garnish

SERVES 2

1. Mix together the soy sauce, honey, sesame oil and garlic. Brush on the chicken breast.

2. Broil the chicken for 3—4 minutes on each side until cooked through, then slice thinly.

3. Spread two slices of the bread with some of the peanut butter.

4. Arrange the slices of chicken on top of the peanut butter.

5. Spread a little more peanut butter over the chicken.

6. Sprinkle on the beansprouts and red pepper and sandwich together with the remaining slices of bread. Cut in half, if desired.
