SMOKED CHICKEN PIZZA

These ingredients complement each other perfectly and make a really delicious topping.

INGREDIENTS
4 small pizza crusts, about 5 inches diameter
3 tablespoons olive oil
4 tablespoons sun-dried tomato paste
2 yellow bell peppers, seeded and cut into thin strips
6 ounces sliced smoked chicken or turkey, chopped
1 1/4 cups mozzarella cheese, cut into cubes
2 tablespoons chopped fresh basil
salt and black pepper

SERVES 4

1. Preheat the oven to 425°F. Place the pizza crusts well apart on two greased baking sheets.

2. Brush the pizza crusts with 1 tablespoon of the oil, then brush generously with tomato paste.

3. Stir-fry the peppers in half the remaining oil for 3—4 minutes.

4. Arrange the chicken and peppers on top of the sundried tomato paste.

5. Sprinkle on the mozzarella and basil. Season to taste with salt and black pepper.

6. Drizzle on the remaining oil and bake in the oven for 15—20 minutes, until crisp and golden. Serve immediately.
