STIR-FRIED CHICKEN WITH SNOW PEAS

Juicy chicken stir-fried with snow peas, cashews and water chestnuts.

INGREDIENTS
2 tablespoons sesame oil
6 tablespoons lemon juice
1 garlic clove, crushed
1/2-inch piece fresh ginger, peeled and grated
1 teaspoon honey
1 pound chicken breast fillets, cut into strips
4 ounces snow peas, trimmed
2 tablespoons peanut oil
1/2 cup cashews
6 scallions, cut into strips
1 can (8-ounces) water chestnuts, drained and thinly sliced
salt
saffron rice, to serve

SERVES 4

1. Mix together the sesame oil, lemon juice, garlic, ginger and honey in a shallow non-metallic dish. Add the chicken and mix well. Cover and let marinate for at least 3—4 hours.

2. Blanch the snow peas in boiling salted water for 1 minute. Drain and refresh under cold running water.

3. Drain the chicken strips and reserve the marinade. Heat the peanut oil in a wok or large frying pan, add the cashews and stir-fry for about 1—2 minutes until golden brown. Remove the cashews from the wok or frying pan, using a slotted spoon, and set aside.

4. Add the chicken and stir-fry for 3—4 minutes, until golden brown. Add the scallions, snow peas, water chestnuts and the reserved marinade. Cook for a few minutes, until the chicken is tender and the sauce is bubbling and hot. Stir in the cashews and serve with saffron rice.
