CHICKEN IN CREAMY ORANGE SAUCE

This sauce is deceptively creamy — in fact, it is made with low-fat ricotta cheese, which is virtually fat-free. The brandy adds a rich flavor, but is optional — omit it if you wish and use orange juice alone.

INGREDIENTS
8 chicken thighs or drumsticks, skinned
3 tablespoons brandy
1 1/4 cups orange juice
3 scallions, chopped
2 teaspoons cornstarch
1/3 cup low-fat ricotta cheese
salt and black pepper
rice or pasta and green salad, to serve

SERVES 4

1. Fry the chicken pieces without fat in a nonstick or heavy pan, turning until evenly browned.

2. Stir in the brandy, orange juice and scallions. Bring to a boil, then cover and simmer for 15 minutes, or until the chicken is tender and the juices run clear, not pink, when pierced.

3. Blend the cornstarch with a little water, then mix into the ricotta. Stir this into the sauce and stir over medium heat until boiling.

4. Adjust the seasoning and serve with boiled rice or pasta and green salad.
