CHICKEN TERIYAKI

Boiled rice is the ideal accompaniment to this Japanese-style dish.

INGREDIENTS
1 pound chicken breasts, boned and skinned
orange segments, mustard greens and watercress, to garnish
For the marinade
1 teaspoon sugar
1 tablespoon rice wine
1 tablespoon dry sherry
2 tablespoons dark soy sauce
rind of 1 orange, grated

SERVES 4

1. Slice the chicken breasts into thin strips. Mix all the marinade ingredients in a howl.

2. Place the chicken in a howl, pour on the marinade and let marinate for 15 minutes.

3. Heat a wok or large frying pan, add the chicken and marinade and stir-fry for 4—5 minutes. Serve the chicken garnished with orange segments and the greens.
