HONEY AND ORANGE GLAZED CHICKEN

This way of cooking chicken breasts is popular in America, Australia and Great Britain. It is ideal for an easy evening meal served with baked potatoes and salad.

INGREDIENTS
6 ounces boneless chicken breasts
1 tablespoon oil
4 scallions, chopped
1 garlic clove, crushed
3 tablespoons honey
4 tablespoons fresh orange juice
1 orange, peeled and segmented
2 tablespoons soy sauce
fresh lemon balm or flat leaf parsley, to garnish
baked potatoes and mixed salad, to serve

SERVES 4

1. Preheat the oven to 375°F. Place the chicken breasts in a shallow roasting pan and set aside.

2. Heat the oil in a small pan, and fry the scallions and garlic for 2 minutes, until softened. Add the honey, orange juice, orange segments and soy sauce to the pan, stirring well until the honey has dissolved.

3. Pour the sauce over the chicken and bake, uncovered, for about 45 minutes, basting with the honey glaze once or twice, until the chicken is cooked. Garnish with the lemon balm or parsley and serve the chicken and its sauce with baked potatoes and a salad.
