CHICKEN LIVER KEBABS

These may be barbecued outdoors and served with salads and baked potatoes, or broiled indoors and served with rice and broccoli.

INGREDIENTS
4 ounces lean bacon strips
12 ounces chicken livers
12 large pitted prunes
12 cherry tomatoes
8 button mushrooms
2 tablespoons olive oil

SERVES 4

1. Cut each strip of bacon into two pieces, wrap a piece around each chicken liver and secure in place with wooden toothpicks.

2. Wrap the pitted prunes around the cherry tomatoes.

3. Thread the bacon-wrapped livers onto metal skewers with the tomatoes, prunes and mushrooms. Brush with oil. Cover the tomatoes and prunes with a strip of foil to protect them while broiling or barbecuing. Cook for 5 minutes on each side.

4. Remove the toothpicks and serve the kebabs immediately.
