CHICKEN LIVER KEBABS These may be barbecued outdoors and served with salads and baked potatoes, or broiled indoors and served with rice and broccoli.
INGREDIENTS 1. Cut each strip of bacon into two pieces, wrap a piece around each chicken liver and secure in place with wooden toothpicks. 2. Wrap the pitted prunes around the cherry tomatoes. 3. Thread the bacon-wrapped livers onto metal skewers with the tomatoes, prunes and mushrooms. Brush with oil. Cover the tomatoes and prunes with a strip of foil to protect them while broiling or barbecuing. Cook for 5 minutes on each side. 4. Remove the toothpicks and serve the kebabs immediately.
