CITRUS KEBABS

Serve on a bed of lettuce leaves and garnish with fresh mint and orange and lemon slices.

INGREDIENTS
4 chicken breasts, skinned and boned fresh mint sprigs, to garnish orange, lemon or lime slices, to garnish (optional)

FOR THE MARINADE
finely grated rind and juice of 1/2 orange finely grated rind and juice of /2 small lemon or lime
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons chopped fresh mint
1/4 teaspoon ground cumin
salt and black pepper

SERVES 4

1. Cut the chicken breasts into 1-inch cubes.

2. Mix the marinade ingredients together in a glass or ceramic bowl, add the chicken cubes and marinate for at least 2 hours.

3. Thread the chicken pieces onto skewers and broil or barbecue over low coals for 15 minutes, basting with the marinade and turning frequently. Serve garnished with extra mint and citrus slices, if desired.
